Sparkling Chardonnay Pinot Noir NV
Tasting Notes
Chardonnay and Pinot Noir grapes from a cool climate region were selected for their natural
acidity and pristine flavour. The time on yeast lees and bottle ageing were short term to
enhance the youthful fruit flavours evident in the wine.
The wine presents a pale golden hue with persistent fine bubbles and the nose contributes
green apple and yeasty aromas. Flavours of almond and nougat blend into a supple palate
of sherbet and creamy yeast characters. A deliciously vibrant wine that is perfect as an aperitif to tantalize the taste buds but very
drinkable with numerous food styles and dishes.

Top Hat Chardonnay 2008
Tasting Notes
Margaret River has long been acclaimed as the region for Chardonnay in Western Australia but there are many fine examples now from the Pemberton and Manjimup regions. For our first Chardonnay, we chose the majority of fruit
from Pemberton, 67% - and from two vineyards. Koolama vineyard and Merum vineyard. The Margaret River component came from Lills vineyard in Marybrook near Dunsborough.
The Premium Tier Top Hat Chardonnay 2008
All the fruit was harvested at optimal ripeness, transported to the winery and fermented in
stainless steel tanks with the addition of French oak staves to impart smoky and vanillan aromas
and a toasty, spicy flavour on the palate. The fruit itself imparted citrus and peach aromas and
nashi pear and stone fruit flavours. The wine is medium bodied though elegant with a textural
mouthfeel, balanced acid and long finish.
It will be best drinking in the first twelve months to three years.
